Nut and Berry Parfait
Ingredients :
Instructions :
- Oikos greek yogurt
- rasberrries, blueberries, or preferred fruit
- 1/4 up sliced almonds
- 2 tsp of honey
Instructions :
- scoop 3 cups of yogurt into cup
- top it with berries and sprinkle sliced almonds
- drizzle honey on top
Lunch
Tuna, Apple, and Avocado Wrap
INGREDIENTS :
Instructions :
- 1 apple
- 1 tsp lemon juice
- Tuna, Rinsed & drained
- fresh parsley, chopped
- 1 tsp olive oil
- salt and pepper
- 1/2 avocado, thinly sliced
- whole wheat tortilla (10 in.)
Instructions :
- chop apple into slices . Remaining 1/2 drizzle lemon juice and wrap with plastic wrap, then refrigerate
- in a bowl, stir together apples, tuna, parsley, & oil. then season with salt and pepper.
- on wrap, arrange avocado slices in center of tortilla. top with tuna salad, wrap tightly.
- on plate, put remaining sliced apples on the side of wrap.
Dinner
Steak and Bean Burrito Bowl
INGREDIENTS :
Instructions :
- beef sirloin steak
- 1 tsp ground cumin
- 1 tsp crushed, dried oregano
- 1 tsp salt
- vegetable oil
- sliced white onion
- 1 tsp cumin seeds
- minced garlic
- 2 cups of black beans
- diced chilis
- 1/2 lime
- tortillas
- toppings : chopped cherry tomatoes, sour cream, shredded cheese, &/ salsa
Instructions :
- Rub spice mix on steak, then let stand for 30 min. then heat 2 tsp of vegetable oil over medium high heat. Add steak. cook for 5 min or until browned, same for other side. cook for another 3-5 min until steak is medium rare. Remove and let rest.
- add onion and a pinch of salt to skillet. on medium heat, cook and stir 7 min or until golden brown.
- heat saucepan over medium-high heat. add cumin seeds; cook and stir for 1 min. add 2 tsp of vegetable oil and garlic. reduce heat to medium, cook 1 min. stir in beans.
- fill tortillas with sliced steak, onion, beans, and desired toppings.
