Almond Cream Cheese Keto Pancakes
Ingredients :
- ALMOND FLOUR & water
- butter, coconut, or avocado oil
- YOGURT/SOUR CREAM AND BERRIES TOPPING
Instructions :
- Mix 3 parts water with 4 parts almond flour .
- heat the pan with with butter, alternative.
- KEEP PANCAKES ON MEDIUM HEAT.
- pour 1 cup of batter on the pan.
- wait until the center of the pancakes begins to bubble, then flip.
- top it off with yogurt/ sour cream and berries.
- drizzle sugar free caramel.
Lunch
Hamburgers and Zucchini Fries
INGREDIENTS :
- olive oil
- 1/2 tbsp of butter
- salt and pepper
- hamburger buns
- preferred cheese
- burger patty
- zucchini
- batter :
- 2 eggs
- 1 tsp salt
- 1 1⁄3 cups of parmesan cheese
- 1 tsp onion powder
- 1/3 cup of almond flour
- 3 tsp of olive oil
INSTRUCTIONS :
- Spread 1/2 tbsp of butter over the pan and place open sides of buns, down. season to liking, cook until golden.
- heat the oil in the pan until simmers and cook the burgers with salt and pepper seasoning until both sides are golden brown.
- line baking sheet with parchment paper.
- Cut the zucchini in half, then cut each half lengthwise. after, Remove the seeds.
- preheat oven 400°F.
- in a bowl, whisk the eggs. Then mix almond flour, parmesan cheese, onion powder, salt and pepper on a plate.
- toss zucchini slices in the flour mixture, dip in eggs to cover, then another coat of flour.
- place fries on baking sheet and drizzle olive oil on top. Bake in oven for 20-25 minutes or until golden brown.

Garlic Chicken with Broccoli and Spinach
Ingredients :
INSTRUCTIONS :
- 1lb chicken breast , cut into 1'" pieces
- 2 tbsp olive oil
- 1 tsp italian seasoning
- 1/4 teaspoon crushed pepper (optional)
- salt and pepper
- 3-4 cloves garlic minced
- 1/2 cup tomatoes chopped
- 2 cups broccoli florets
- 2 cups baby spinach
- 1/2 cup shredded cheese mozzarella, cheddar, parmesan, or melting cheese
- 4 oz cream cheese
INSTRUCTIONS :
- Heat 2 tablespoons of olive oil in a pan over medium-high heat. Add the chopped chicken breasts, season with Italian seasoning, crushed red pepper, and salt & pepper. then, Sautee for 4-5 minutes or until chicken is cooked through.
- Add the garlic and saute for another minute.
- Add the tomato, broccoli, spinach, shredded cheese, and cream cheese. Cook for another 3-4 minutes or until the broccoli is cooked through.
- serve with cooked pasta and rice.
